I admit that ordinarily I would be inclined to turn my nose up at recipes that call for a package of this and a box of that. The television commercials that depict the notion of “cooking” as adding a package of Philly to pasta, or onion soup to ground beef make me cringe…until I sampled the Chocolate Cavity Maker Cake. Even the name is bad, but like so many “bad” things before it, it’s oh so good!
For me it recalls the days when a package of white cake mix baked in an oblong pan, poked with plenty of fork holes, and topped with chocolate jello pudding, was my mid-week special. At twelve I called that baking and happily enjoyed a slice after school with a tall glass of chilly milk. It was delicious until the pudding topping formed the fat skin. It was the kind of cake SATC’s Miranda might have been tempted to pull out of the garbage for just one more piece in a moment of desperation.
So tasked with dessert for a gathering of my dear ladies friends on a Sunday afternoon, and with my new baby girl making my leisure baking time a thing of the past, I thought I would turn out this quick, easy, moist, rich, and satisfying chocolate cake. I added my own special touch and whipped up some Chocolate Kahlua Whipped Cream for the top. It was a hit! Don’t let the Chocolate Fudge Cake Mix, Box O’ Pudding, Tub of Sour Cream, or Kahlua throw you. This is good cake. I swear on Jello Pudding and Bill Cosby.

Chocolate Kaluha Whipped Cream
2 cups whipping cream
2 Tbsp cocoa
2 Tbsp confectioners sugar
1 Tsp Vanilla
2 Tbsp Kahlua
Whip the cream until it forms soft peaks. Add cocoa, sugar, and vanilla, and blend to combine. Add Kahlua and serve.

Always with fresh whipped cream. YUM!
