Our short summer season seems to be quickly coming to a close in Edmonton, and so I am rushing to enjoy as many fresh summer offerings as possible. With Okanagan fruits nearing the end of their season, an assortment of gorgeous tomatoes on offer at the markets, and an abundance of mint in my garden, this colourful heirloom tomato and peach salad caught my attention. Simple and so delicious, adorned with fresh mint and a splash of balsamic, it made the perfect accompaniment to our dinner of steamed asparagus with butter and fleur de sel, fresh proscuitto wrapped figs stuffed with blue cheese and quickly grilled, and a big grilled prime rib steak. It was a dinner that justified opening a bottle of red on a week night. So good.
