Learning to turn the the chicken partway through totally changed my life, but I’ve never tried the high heat method; I’ll give that a go next time I put a bird in. Another method that works for getting the skin all golden and crispy is to rub the chicken with a fair bit of kosher salt a few hours before it goes into the oven.
